Ingredients:
- 1 chicken, cut into 10 pieces (each breast into 2, the 2 thighs, 2 drumsticks and 2 wings)
- Salt and pepper to taste
- 2 tbsp cayenne
- 1 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 tbsp brown sugar
- 200ml milk
- 2 eggs
- 2 tbsp hot sauce
- 250g flour
- Oil for frying
- White bread and dill pickles to serve
Method:
1. Start by seasoning the chicken pieces well on both sides. Place them into a container and in the fridge, covered for 3-4 hours
2. In a small bowl, mix together the cayenne, paprika, garlic powder and brown sugar and set aside
3. In a large pot or dutch oven, heat the oil to 180ยบc
4. Place the flour in a bowl and in a second bowl add the milk, eggs and hot sauce. Whisk the eggs, hot sauce and milk together
5. Mix 2-3 tablespoons of the milk mixture into the flour mixture (this will make lots of nice crispy bits)
6. Take the chicken and place it into the flour, then into the milk mixture and back into the flour, then onto a tray
7. Fry the chicken in the hot oil for 8-10 minutes or until golden brown
8. Check the internal temperature of the chicken. You are looking for 70ยบc (if its not 70ยบc, but it has good colour, then you can finish it in the oven if you need to)
9. Pour 2 teaspoons of the hot oil into the dry spices mix from Step 2, and mix well
10. Brush the spice/oil mixture over the fried chicken and serve on white bread with pickles
