Ingredients
- 6 good quality sausages (pork, beef, lamb - use what you fancy)
- 1 tbsp olive oil
- 1 green apple, sliced thin
- 1 brown onion, sliced thin
- 4 cloves garlic, diced fine
- Small bunch thyme, cut fine
- 2 tbsp flour
- 1 tin cherry tomatoes
- 500ml chicken stock
- 1 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 1 tbsp English mustard
- 1 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp chilli flakes
- Salt to taste (you should not need much)
- Mash to serve
- Parsley to garnish
Method
1. Start by browning your sausages off over medium heat in a large saucepan. Once you have a good colour on the sausages, remove from the pan and set aside.
2. Add the olive oil to the pan and once it comes up to temperature, add the onions and sauté for 3 minutes.
3. Next, add the garlic, apple and thyme and cook for a further 3-4 minutes.
4. Now add the flour and stir well, cook the flour out for 3-4 minutes
5. Add the tin tomatoes and stock and over high heat and mix until the flour has dissolved.
6. Mix in the soy, Worcestershire, mustard and spices then add the sausages back to the pan.
7. Simmer for 10 minutes or until the sausages are cooked through.
8. Garnish with chopped parsley and served with mash. Enjoy!
